DESCRIPTION
A classic childhood favourite, nothing says comfort food like a big chunk of Rocky Road and a cup of tea! We’ve kept our recipe super simple, but feel free to add up to 60g of anything you like to the mixture – nuts, dried fruit, cereal – you name it! There are no rules here (except the 60g rule, otherwise it’s gonna be a mess…)
INGREDIENTS
(Makes 12 bars)
180g digestive biscuits
135g butter
200g good quality milk or dark chocolate
3 tbsp golden syrup
1 pouch of Mallow & Marsh Chocolate marshmallow (feel free to sub with another flavour!)
METHOD
- Crush the digestive biscuits in a bowl until broken into small chunks with a rolling pin
- Melt the butter, chocolate & golden syrup in a saucepan on a low heat and whisk until fully incorporated into a smooth, silky heavenly chocolate mixture and leave aside to cool slightly
- Chop the marshmallow into halves and mix into the chocolate mixture with the digestive biscuits
- Stir the mixture until the biscuits & marshmallow are evenly mixed and pour out into a baking tray lined with baking parchment
- Using a potato masher or spatula, flatten the mixture until evenly spread out
- Pop the tray into the fridge for at least two hours to set
- Using a large knife, cut into squares and enjoy!
